Ingredients:
2 or 3 pound pork tenderloin
6 to 8 strips of bacon
1 apple, peeled and sliced
1 cup applesauce
1 package fresh spinach
1 pound Brie cheese, cut into bite-sized pieces
1/2 cup craisins
1/2 cup walnuts, sliced almonds or pecans
1 teaspoon each of salt, pepper, and garlic
2-3 tablespoons of maple syrup
Directions:
- Heat oven to 350. Lay out bacon on a baking sheet. Cut the tenderloin in half and put the bottom on top of the bacon.
- In a mixing bowl combine the applesauce, spinach, Brie cheese, craisons, nuts and seasoning. Spoon on top of the tenderloin and put the top layer of the tenderloin back on.
- Top the tenderloin with sliced apples and wrap the bacon around the pork and apples. Secure with tooth picks. Brush with maple syrup.
- Bake for 30 to 35 minutes or to 145 degrees.
