Shrimp Cakes

Ingredients:

 

1/2 pound shrimp, peeled and tails removed, diced very fine or put into a food processor

1 cup Panko

1/4 cup onion, finely diced

1/4 cup celery, finely diced

1/4 cup bell pepper, finely diced

1 tablespoon parsley

1 tablespoon mayonnaise

1 tablespoon mustard

1 egg

1 tablespoon lemon juice

Salt, pepper, Cajun seasoning, and garlic powder to taste

2 tablespoons oil

Lemon wedge and hot sauce for garnish

 

Directions:

 

  1. Mix together all the ingredients except for the oil and Panko to make equal sized patties.
     
  2. Gently dust the patties with the Panko and fry in the oil. Let them brown on the first side before gently flipping them over.
     
  3. Garnish with lemon and hot sauce.
