Fish Florentine

Ingredients:

 

4 fish fillets (white fish such as cod, halibut, flounder, or tilapia). Salt and pepper each side.

2 tablespoons olive oil, divided

2 tablespoons butter, divided

1 cup red bell pepper, diced

1 tablespoon minced garlic

9 ounces fresh spinach or 1 package frozen (drained)

2 ounces cream cheese

1/4 cup half and half

1/4 cup parmesan cheese

salt and pepper

 

Directions:

 

  1. In a skillet, heat 1 tablespoon olive oil and 1 tablespoon butter. Add red bell peppers and saute for 4 minutes. Add the garlic and spinach and cook until spinach is wilted.
     
  2. Add the cream cheese, half and half and parmesan cheese to the spinach and melt it all together. Add salt and pepper to taste.
     
  3. In a separate skillet melt 1 tablespoon olive oil and 1 tablespoon butter. Saute the fish until it is cooked and flakey. Serve fish on top of creamed spinach.
