4 fish fillets (white fish such as cod, halibut, flounder, or tilapia). Salt and pepper each side.
2 tablespoons olive oil, divided
2 tablespoons butter, divided
1 cup red bell pepper, diced
1 tablespoon minced garlic
9 ounces fresh spinach or 1 package frozen (drained)
2 ounces cream cheese
1/4 cup half and half
1/4 cup parmesan cheese
salt and pepper
- In a skillet, heat 1 tablespoon olive oil and 1 tablespoon butter. Add red bell peppers and saute for 4 minutes. Add the garlic and spinach and cook until spinach is wilted.
- Add the cream cheese, half and half and parmesan cheese to the spinach and melt it all together. Add salt and pepper to taste.
- In a separate skillet melt 1 tablespoon olive oil and 1 tablespoon butter. Saute the fish until it is cooked and flakey. Serve fish on top of creamed spinach.
