1 pound pork tenderloin, cut into
1 tablespoon soy sauce
3/4 teaspoon thyme
1/4 teaspoon ginger
1/4 teaspoon red pepper flakes
Dash of allspice
Mix above ingredients together to coat the
1 tablespoon oil
1 tablespoon butter
1 cup onions, chopped
1 cup bell pepper, chopped
1 or 2 plantains, chopped, about 2
1/2 teaspoon black pepper
1 tablespoon chopped garlic
1. In a hot skillet add the oil and sauté the pork, Remove the
pork and keep warm.
2. In the same pan, add the butter and remaining ingredients and
sauté till the plantains are soft, about 6 minutes. Stir as little as possible.
3. Stir the pork back into the skillet and mix all together. Serve with a hot sauce of your liking.
