Vietnamese Pho

Ingredients:

 

2 packages of Oriental Ramen Noodle mix

4 cups water or chicken broth

1 cup cooked chicken, shredded

2 cups fresh spinach or 1 cup frozen

2 eggs, soft boiled and peeled

1/2 cup green onions, diced

1 jalapeno, thinly sliced

Cilantro

1 lime

 

Directions:

 

  1. Bring 4 cups of water or chicken broth to a boil. Add the seasoning mix of Ramen noodle packes and the noodles and cook for 3 minutes.
     
  2. In a large individual serving bowl, layer the chicken and spinach. Pour the boiling broth over the chicken and spinach and divide the noodles equally in the bowl.
     
  3. Cut the egg in half and add to the bowl, then top with green onions, jalapenos, and cilantro. Squeeze with lime to taste and serve.


You can add a variety of vegetables to this recipe (e.g., grated carrots, bean sprouts, corn, or mushrooms). You can also adjust the flavor with any Asian sauces you have in the refrigerator. This can also be made with thinly sliced beef.
