Stuffed Pork Tenderloin

Ingredients:

 

2 or 3 pound pork tenderloin

6 to 8 strips of bacon

1 apple, peeled and sliced

1 cup applesauce

1 package fresh spinach

1 pound Brie cheese, cut into bite-sized pieces

1/2 cup craisins

1/2 cup walnuts, sliced almonds or pecans

1 teaspoon each of salt, pepper, and garlic

2-3 tablespoons of maple syrup

 

Directions:

 

  1. Heat oven to 350. Lay out bacon on a baking sheet. Cut the tenderloin in half and put the bottom on top of the bacon.
     
  2. In a mixing bowl combine teh applesauch, spinach, Brie cheese, craisons, nuts and seasoning. Spoon on top of the tenderloin and put the top layer of the tenderloin back on.
     
  3. Top the tenderloin with sliced apples and wrap the bacon around the pork and apples. Secure with tooth picks. Brush with maple syrup.
     
  4. Bake for 30 to 35 minutes or to 145 degrees.
