Pineapple Stir Fry

Ingredients:

 

1 pound boneless, skinless chicken cut into cubes

2 tablespoons cornstarch

2 tablespoons oil

Salt and pepper to taste

1/4 cup soy sauce 

2 tablespoons brown sugar

2 tablespoons apple cider vinegar

1 tablespoon ketchup

1 tablespoon minced garlic

1/2 teaspoon ground ginger

1/2 teaspoon red pepper flakes

1 package (16 ounces) stir fry vegetable blend

1 can (8 ounces) pineapple chunks, drained

3-4 cups cooked rice

 

Directions:

 

  1. Toss the chicken with the cornstarch and salt and pepper. Fry in a hot skillet until crispy.
     
  2. Add soy sauce, brown sugar, vinegar, ketchup, garlic, ginger, and red pepper flakes and continue to cook until hot.
     
  3. Add the vegetables and pineapple chunks and cook to desired tenderness.
     
  4. Serve over rice and top with sesame seeds or diced green onions.
